Day 1: Arrive to Seville and adjust to the gentle rhythms of Andalusia. Stretch your legs, and get your bearings on a guided walking tour of your historic hotel and surroundings. That evening we’ll meet for a festive celebratory welcome dinner with other guests and tour leaders James and Lauren.

Day 2: Delve deeply into Seville’s culinary traditions on a private walking food tour, tasting at tucked-away family-run establishments. That afternoon discover the city’s iconic sites with a private guide (including the Seville Cathedral, last resting place of Columbus, and the twisting Jewish Quarter). Dinner at a leading modern tapas restaurant includes a private pre-meal chat with the owners.

Day 3: Head for the rolling Andalusian countryside, tasting and learning about Spain’s world-famous acorn-fed black-hoof ham (jamón) at a family-run producer. Then explore spectacular underground caves before enjoying an unforgettable private visit to world’s first ethical foie gras producer – NPR-featured La Patería de Sousa.

Day 4: Tour the sumptuous private palace of Seville and Spain’s most famous noble family followed by lunch at your leisure. That evening, be swept up in a night of tapas bars and spellbinding flamenco. As you hop between tapas bars, your expert guide will unveil the mysterious origins story of flamenco before taking in one of the city’s best shows.

Day 5: Leave Seville by private coach to stroll thriving olive groves and taste award-winning extra virgin olive oil at a magnificent mill, before pulling into captivating Cordoba, a city where Muslim, Catholic and Jewish cultures co-existed in harmony. An expert guide will tell the story of this ancient city on a private tour of its celebrated sites, followed by a stirring pre-dinner concert of sephardic music in a private patio.

Day 6: Savor rich red wines and wander verdant vines at renowned Huertas del Albala winery before lunch in the historic Parador in village Arcos de la Frontera. Then learn to rustle up true Andalusian cuisine in a private cooking class with renowned instructor Annie B in her hilltop Casa Alegre in the ancient village of Vejer de la Frontera.

Day 7: Head for the coast, led by Annie B, to discover ancient local tuna fishing, salting and smoking traditions before a tuna-rich tasting menu at famed El Campero. Then step back into the past, strolling spectacular seaside ruins at Baelo Claudia, an ancient Roman fish salting town nestled on the Straits of Gibraltar.

Day 8: Strike out for sherry country, touring the enchanting town of Jerez and tasting and learning about the almost mystical (and much misunderstood) sherry wines at glorious 19th century family-run winery Diez Merito. After lunch return to Seville for a farewell dinner of celebrated Andalusian slow food at much-loved local restaurant.
